Because I love you all, I must share my cranberry salad recipe. It's okay if you don't like cranberries, there's lots of other stuff to distract you.

Vegetarians can leave out the Jello, and it's still delish.

I've posted it on Tasty Kitchen clicky(if anyone is a member, I'm vonneybeth there, just so you know I didn't copy).

It's actually my mom's recipe, and I've tweaked it since I posted it on TK, and since TK doesn't lend itself to my fancy-free way of recipe writing, I'm putting it here too.

2 boxes of Jello, cranberry, cherry, or raspberry-your choice.
16 oz cranberries (fresh or frozen).
4 oranges
4 apples (I prefer red delicious, they're firm and tart)
3/4 chopped pecans (or more, depending on your love of pecans)
miniature marshmallows

Make the Jello according to the box directions, which will call for 2 cups of boiling water, stir until dissolved, then add 2 cups of cold water (for 2 boxes).
If you want a real sugar rush, instead of the cold water, use orange juice, and if you want a sugar coma (read extra tasty), make concentrated orange juice with 1/2 the water that is called for and use that. YUM

Anyway, pour the jello into a 9X13 dish, reserving about a cup, and put it in the refrigerator (I used all of the jello the first time I made it and made a mess).
Pulp the oranges (a grapefruit knife works well here), or you can use cans of mandarin oranges and use that juice for the cold water.
Peel and chop up the apples.
Chop up the cranberries (a food processor is a good thing for this)
Chop pecans if you didn't buy them that way.

mix it all up together, then stir into the Jello that should be cool but not gelled. Then add the marshmallows. You can stir in the marshmallows or you can just smoosh them down into the liquid so that they turn pink.

It's one of my favourite things, and you can tweak it according to your love of apples, oranges, cranberries or whatever. This is just a guide, as all recipes should be, IMO.

I just want to point out that if you want to use the jello and are a vegetarian you may want to look for kosher products...most of them are made with carageenan which is extracted from seaweed to serve as a jelling agent.
